There’s only one thing to say about this recipe – it is the closest I have ever come to replicating my favourite dish from when I lived in Bangkok, Thailand. I used to eat at a local restaurant in my neighborhood called P. Kitchen on Sukhumvit Soi 18. I really knew it was good when I went there with a couple of Thai friends and it subsequently became THEIR new favourite restaurant and rendition of kra pow gai or Thai chicken with holy basil and chilies.

I spent a great many months trying to replicate the flavour – a little less fish sauce here, a little more holy basil there, until I struck gold one day and captured the amazing krapow gai flavour I was looking for. Read Chubby Hubby for my recipe.
