I recently wrote an article on unusual Champagne and food pairings for Chubby Hubby. In the piece I had suggested Macaroni & Cheese and Champagne (or Prosecco) as an amazing pairing because of the creamy buttery dish being nicely complemented by the crisp acidity and freshness of bubbles. And just thinking about Macaroni & Cheese made me wax poetic about the best Mac and Cheese in the world – my mother’s.

I grew up in the Southern US, so this should give you a clue as to the nature of the recipe – cheesy, creamy, down-home goodness. My mother still makes this for me when I visit from Asia and after decades of eating it, I swear it just gets better!
